ARUGULA SALAD WITH ORANGES

Recipe Ingredients
- 2 small oranges (preferably seedless variety or blood oranges), peeled and sliced into 1/2-inch rounds
- 1/2 red onion, thinly sliced
- 1 cup torn red or green leaf lettuce
- 3 cups trimmed arugula
- SALAD:
- Salt and pepper to taste
- 2 1/2 Tbsp. olive oil
- 2 tsp. sugar
- 1/2 tsp. Dijon mustard
- 3 Tbsp. lemon juice
- DRESSING:
- GARNISH:
- 1 Tbsp. freshly grated Parmesan cheese
Instructions
1. In a small bowl or measuring cup, combine the lemon juice ,sugar and mustard. In a thin stream, add the oil, and whisk constantly until incorporated. Season with salt and pepper to taste and set aside. 2. Combine the arugula and red or green leaf lettuce on a platter. Top with red onion slices and oranges. Pour dressing over salad. Sprinkle with Parmesan cheese.
