ZUCCHINI RIBBONS

Recipe Ingredients
- 2 medium or o large zucchini, ends trimmed, unpeeled
- 2 tsp. olive oil
- 3 garlic cloves, minced
- 1 cup halved cherry tomatoes
- 1/2 tsp. dried basil
- Salt and pepper to taste
Instructions
1. With a wide vegetable peeler, peel off long, thin lengthwise strips of the zucchini. 2. Heat the oil in a large skillet over medium heat. Add the zucchini ribbons and saute for 4 minutes. 3. Add the garlic and saute for 2 minutes. 4. Add the cherry tomatoes and saute for 2 minutes. 5. Sprinkle with basil and salt and pepper to taste, and cook for 1 minute.
