Marinated peppers and mushrooms

Fabulous marinated salad that is equally good hot or at room temperature. An excellent garnish for gefilte fish.

Recipe Ingredients

  • 1 each of red, orange, yellow and green peppers cut into strips
  • 1 onion sliced very thinly
  • 1 box of mushrooms sliced
  • 1/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 1 tsp salt
  • 1 tsp garlic powder or 2 garlic cloves peeled and crushed
  • 1 tsp mustard powder
  • 1 Tbl brown sugar
  • 2 Tbl oregano

Instructions

In a large saucepan, mix all ingredients except for peppers,onion and mushrooms. Bring to a boil. Reduce to simmer. Add peppers, onion and mushrooms. Simmer 15 min stirring occasionally. Allow to cool. Transfer to storage container and chill in refrigerator overnight. Serve hot or at room temperature.
