MINI CRUSTLESS QUICHES (Dairy) Makes 24 mini quiches. "cooking with faith" tm 1997 INGREDIENTS: 4 large eggs-room temperature 1/4 cup water 1/2 cup shredded Swiss Cheese (you may use any cheese you like-cheddar or Monterey jack are good) 1/4 cup chopped chives (you may use scallions if finely chopped) salt and pepper to taste Sun-dried tomatoes (not in oil) - optional DIRECTIONS: 1. Preheat oven to 400 degrees F. 2. Whisk the eggs, water, and chives together. Season with salt and pepper. 3. Fold in the cheese. 4. Pour into lightly greased mini muffin pans (1/2 full) . 5. Bake until puffy and the tops just bounce back when pressed, about 8-10 minutes. GOOD TIP: FOR OMELETTES: SAUTE ONIONS AND/OR MUSHROOMS IN PAN FIRST AND THEN POUR EGG MIXTURE ON TOP.
